White Chocolate Popcorn

Since chocolate is on the order form this month I wanted to pass on some of my favorite chocolate recipes.  This is one of my favorite treats.  Not only to eat, but to give as a gift.  I never purchase it from the store because it’s way to expensive and way to easy to make myself.  Sadly by passing the recipe on here it won’t be nearly as impressive as it was previously because you will see how EASY it is!

One of my favorite things to do is coordinate the color of the chocolate to seasons or events.  I’ve made blue and yellow for the Cub Scout blue and gold banquet, I’ve made pink and white for Young Women’s Recognition night and done some seriously cute color combos for spring and fall.  I made this batch for my favorite optometrist, Dr. Jennifer Keiser.  She was a HUGE lifesaver with my daughter’s recent eye emergency.  I thought kids were supposed to be easier once they left for college!!!  My hair is turning grey from this one!

This looks super cute in clear cellophane bags.  All you need to do is add some raffia and a cute card and you are good to go.  That is, if you can get it into the bag before the kids and hubby eat it all!!!

I used White Satin by Guittard for white chocolate popcorn this time because it was recommended and I LOVED it.  It has a wonderful taste.  If you want colored popcorn you need to purchase food coloring made specifically for chocolate, they carry it at “Bakers Cash and Carry”.  Go in and grab some with your discount this month!!!  All you need to tell them is that you are with the Caffeinated Preparedness Group.  In the past I have used Merckens Wafers because the color choices are endless.  They have a great new blue color, I might need to make some blue and white for game days!  Make sure to use good popcorn, Orville Redenbacher’s is a good choice.  I always pull out my air popper for this project but you could always use microwave popcorn w/out butter and salt.

White Chocolate Popcorn
10.5 oz. chocolate
12 cups popped popcorn

Place chocolate in an oven proof bowl and place it in the oven on the very lowest setting (150-170).  Let chocolate melt in the oven for about 20 min.  The chocolate will stay in wafer form until it is stirred.    Sift through your popcorn and discard any un-popped kernels.  Pour melted chocolate over popcorn and stir until well mixed.  Pour popcorn out onto a sheet of parchment paper in a thin layer and let cool for 20 min.  Break popcorn apart and ENJOY!!!

I thought these turned out so cute.  I decided after I did the first batch I needed to do another batch with plain white popcorn and layer it like a candy corn.  I’m glad I did, I think I like it best!
