I ground the zucchini into a powder (in the blender) for the lasagna and clam chowder and I added it directly into the Taco soup. Another bonus to the dehydrated zucchini is the thickening power. I’m loving it in my soups that could use a little more thickening. I just add the zucchini in with the other vegetables in my soup so it has time to soak up all the water.
I think next time I dehydrate zucchini I’m just going to ground it into a powder after it’s dried and not worry about measuring it out into baggies. I haven’t tried the dehydrated zucchini in zucchini bread yet, maybe I’ll change my mind when I do.

You can also freeze zucchini…I have a great recipe given to me for Zucchini Brownies. My kids beg for these. They’re yummy!
