Pressure Canning Tomatoes

AGHH… why have I been such a baby about using the pressure canner???

My blood pressure rose this afternoon as I pulled my pressure canner out of the box.  It’s only the second time mine has seen the light of day and I’m not sure why because the first time was such a success.  I guess it’s just easier for me to pull out the water bath canner because I can pretty much do tomatoes in my sleep.  That’s the way I canned fruit with my mom growing up and so I’m pretty comfortable with it.

So back to the rising blood pressure.  I looked at my almost brand new canner that looks a little like a mad scientist experiment of some kind, although I do feel like I must be an awesome cook to have a pan like that, it’s pretty beefy.  I stared at the pressure gauge and immediately broke out in a sweat.  I’m sure I read through the owner’s manual the first time I used my pressure canner but I couldn’t remember a thing and it wasn’t in the cards to read it again today.  In my effort to not chicken-out and pull out the water bath canner I called my faithful friend to come and hold my hand though the process.

From start to finish it took me under 40 min. to can 7 quarts of tomato juice.  This is compared to the two hours it takes me to water bath 7 quarts of tomato juice.  SERIOUSLY– it was soooo… easy!

I could slap myself for all the time I’ve spent canning tomatoes in a water bath canner while I had a practically brand new pressure canner sitting on the shelf.  In an effort to make myself feel better I’ve decided to blame my mom for this 🙂  She never taught me to pressure cook so I’m putting the full weight of this on her shoulders.  Now I just need to figure out who to blame for my dirty bathrooms because she did teach me how to clean those.
